Broccoli Cream with goat cheese: healthy and natural!

Autumn is slowly giving way to winter and we have to keep our immune system at its top together with the idea that a warm and hugging recipe like this will let us love the idea to be back home!!

It's easy to be done and the delicate taste of a fresh goat cheese will exalt the flavor of this cream to its best.

Serving size 4

1 lt. vegetable broth (make it with a carrot, a piece of celery, a piece of leek and some chives. Let it boil for at least 40 minutes)

800 gr. fresh broccoli

2 potatoes

1 leek

Extra virgin olive oil

Salt and pepper to taste

Fresh goat cheese

Chives and dill to taste


Direction

First of all let us prepare the vegetable broth as you can read in the ingredient section. Peel the potatoes and cut them into small pieces, cut the leek after having washed it. Wash the broccoli too and separate the flowers from the central part of the vegetable that we won't use.

Put the extra virgin olive oil in a pan, add leek and potatoes, let everything fry just a little, add the vegetable broth and after some minutes, add the broccoli too.


Make all the vegetables cook in the broth till they are going to be smooth enough. Meanwhile wash and cut the aromatic herbs. When the vegetables are ready, put everything in an immersion mixer, settle the cream in the dishes, add the aromatic herbs, black pepper, just a "scent" of evo oil and the goat cheese on top. Serve it warm
